A SUCCESSFUL EXPERIMENT!
Last year the spring planting of carrots produced only a few plants - the weather was not cooperative with germination needs. More seeds were planted mid-August, with excellent germination rates. However, given the short growing season remaining, the crop was not harvested, but over-wintered as an experiment.
Success! As soon as the soil could be worked, the carrots were harvested - they are small, but they did survive the winter.
If there are any carrot seeds remaining after initial planting, I will hold onto them and do a late planting this year to over-winter and harvest in 2027. It might be worth experimenting with other root vegetables as well - beets, turnips, parsnips (which I've not yet grown, but may try this year).
These carrots are going to be delicious with some hummus - a nice side for dinner tonight!
